Sweet Potato Pizza with Kale and Carmilized Onions


2-3 large sweet potatoes

1 clove garlic

salt & pepper


large pizza crust of choice

crumbled goat cheese


2-3 med to large onions


Heat oven to 350. Microwave sweet potatoes wrapped in saran wrap for 5-8 mintues until done.

Work on the onions while the potatoes cool. Cut onions into slices and cook on medium heat with 2 TB of butter or olive oil. Add salt and pepper, and a little bit of sugar or honey (1TB) if you want them sweeter. Stir every so often, but just let them brown for about 15 minutes.

Roll out your pizza crust and pre-bake if required – follow package directions. You want the crust to be fairly crispy because the potato puree will weaken it.

Pull the skins off the sweet potatoes and discard. Mash potatoes in a large bowl, adding chopped garlic clove, salt, pepper and rosemary to taste.

Assemble pizza. Spread a thick layer of the potato puree on crust. The top with goat cheese, bite-sized kale pieces and onions. Bake for 10-15 minutes until warmed through and kale is crispy but not burnt.
